My summer time eating w/ bell pepper medley recipe!

June is coming to a close and summer is in full swing. In Florida it is hot and I don’t mean just hot I mean hot-enough-to-melt-your-soul hot with humidity as an energy draining bonus.

Lately, I have been paying attention to what I consume. I want more fresh fruits and vegetables in my life. I want to feel excellent when I wake up not like I got ran over by a
steamroller in the middle of the night. So this summer I am going to dramatically reduce the amount of meats and fried foods I eat. I am already conditioning myself for it and it is working out nicely. I also have began to so some P90X that a friend loaned me. Ab Ripper X is fantastic! If you are looking for an exercise regimen that you can feel whipping you into shape DO check that one out.

Today’s meal is:

STASH Pomegranate Raspberry Green Tea
1/2 a bagel buttered
Clam chowder
1 small Granny Smith apple cut in wedges
Scrambled eggs with salt, pepper and season salt
Bell pepper medley (see below)

My Bell Pepper Medley

To prepare the bell pepper medley this is what I did:

1.Ssauté in oil onions and your red and green peppers. I did this on LOW heat.

2. Season with salt and pepper

3. Remove from stove and plate. Cut cherry tomatoes in half and place with bellpepper medly and Tada! Excellent, crunchy, and visually pleasing side to any meal!
